Is it normal to get some interaction between channels? If it's not, what might be the issue?

It actual seems like I'm getting a fair amount of interaction...

What do you mean by "Interaction"?  Are you talking about crosstalk or bleed between the channels?  Or are you referring to signal on the left channel triggering gain reduction on the right?

The signal on the left is effecting signal on the right... It seems like a can turn the input amount up and get the other side to compress

It's a linked stereo compressor, so the gain reduction is the same for the L and R channels.
If you follow the schematic the signal from the L and R is summed near the attack and release controls
A dual mono version would allow the L and R to be unlinked.
To make your SSL dual mono you could add a second set of attack / release controls and then a switch so as to not sum the CV for the Gain Reduction.

" a dual mono ..."

Or you could use a turbo :)  which adds a sidechain section so the left and right sides detectors are independent (even though they share the same front panel controls)

Mind you 1dB is not very much? I doubt that they overall accuracy of the circuit is going to be better than that.
