I am not expert on the microphones, but is it possible to make a list of tubes and suitable transformers in typical tube circuits (royer,u47, c12 ...), together with the manufacturer ?
For example:

6072A - Haufe T14/1, AMI T14
VF14,EF13,EF14,UF14 - AMI BV8, Haufe BV8
5840, EF732 - Cinemag 2480, CM DBX, Jensen JT DB(e)

Especially I am interested why one recommend BV8 as suitable transformer for 5840 tube and on the other side Cinemag 2480 for the same tube, but they have different ratios ?

I think that you should much more considering by what ratio you need or what output impedance/level you need.
I've built Jakobs G7 with 10:1 trafo and currently building  David Royer "mod"  based mike with T14/1.
These have different ratios than  in original designs but works great.
