Am i right in thinking the basic GSSL design doesn't take the make up gain out of the equation when in bypass mode?

Do we know how to reverse this situation? (If we do can anyone give me parts list and/or details/schematics for this coz i'm about to start buying & building)

...God i am scared! I really feel like i'm getting in at the deep end here, but hey thats always been a good way to learn in the past

The bypass switch needs to do two things in order to have makeup gain not active while bypassed:

It needs to ground the sidechain

It needs to break the circuit between the sidechain and the wiper of the makeup gain control.

If you are using a DPDT switch, you can wire each side of the switch to do this.
