Toroid transformers... installation tips. Anything I need to watch out for? Do I need additional insulation?

I've never used these types before... I've always used the "classic" design or the sealed PCB mount.
 
Shorted turns !!

Don't let the mounting bolt touch the top plate.
This would give a shorted turn through the case. ... bottom + bolt + top + side and back to bottom + shorted turn ...

I have a dimple moulding for my press. This gives a big depression in the base for the head of the bolt to fit into.

Nutserts in the base can be a good option.
A Nutsert press can also give you the PCB stand OFFs.

All press' can be expensive though.
 
Orient the point at which the leads come out of the transformer the opposite direction from any hum sensitive circuitry. The winding asymmetry caused by the lead terminations makes flux leakage greater at that point.
