I am building a speaker cabinet with two 12" speakers. I want to be able to plug my head into bot speakers in series, but I also want the option to plug two amps in as a "dual mono" thing. Is this possible with the wiring that I came up with here?

I've done something similar using a 2x12 cab, switching between 16ohm series mono, and 8 ohms idependant stereo, but I did it with a heavy duty DPDT switch. I'd probably avoid those switched 6.5mm sockets for something like this - I doubt the flimsy contacts in them would handle a great deal of punishment, especially with the big currents involved in driving those 12" speakers.

Not "in series", not with standard SwitchCraft switch-jacks.

Parallel is easy. IF in stereo mode you can be sure both amps can be happy with shells tied together.

Much better to build a special cord to get series-mono.
 
With stereo jacks it is possible, using the guitar FX pedal dirty trick of abusing the ring contact as a switched ground connection when a mono plug is inserted:
