As we are expecting a new member of the family to arrive very soon (within days) , and because I can´t get hold of my DuKane limiter to try out the mods suggested by PRR , I decided to go about my yearly Quince Jam making. Almost finished, I realized that there might be some knowledge about this here on the forum (as we´ve seen tea making, curry etc...)! Also, I´m a swede, and quince isn´t really that big a topic around here (nor is the fruit itself). So here´s how I did it:
2 1/2 pounds of quince
3 cups of water
3 lemons
4 cups of sugar
Wipe/wash quince, quart. Zest lemons, then press. Heat the water, then put fruit and lemonjuice in. After 5 min, remove fluid and crush fruit. Put fluid back, add sugar. Put to boil again, then strain to remove seeds etc. Add zest. Boil til pink, put in jars!
