I am wondering if anyone has an Analogue to Digital or Digital to Analogue converter in DIY form. High quality one comparable to ones like Apogee and higher?

The only thing close as far as I know is the TI PCM 4222 Eval board...

You will need to read the manual, build or procure a proper psu for it, set the jumpers and then "evaluate it", and maybe put it in an enclosure.

It only does 2 channels/AES/Spdif...

But its quality is "future proof" technology (meaning it will do DSD) and it blows away any and every converter I've ever used including Apogee and Prism...
