After several unfortunate crashes of other PCB software, and subsequent loss of work, I decided to give Eagle another try.
At the Borders bookstore I have come across a book that has some Eagle examples on creating components and it explains how the three entities relate (symbol, package, device). This kind of turned the light on for me and I spent two days learning and practicing Eagle.
At the end of the two days I came out with an DC/DC converter design that takes +18V and converts it into +-75V for polarizing capsules.
It turns out Cadsoft recommends this book at their site:

The book is far from comprehensive, but it gets you started on the right track and introduces basic techniques that are not intuitive otherwise. It has some chapters on etvhing your own boards as well.
