Lets use the following transformer as a basis for this discussion

Secondary windings = dual, no CT
Series output = 44VAC @ 1.1A
Parallel output = 22VAC @ 2.2A

Every datasheet I have ever looked at states that for either parallel or series output, two wires of the four secondaries need to be tied together. What happens if you don't tie them together? will this transformer put out 2 x 22VAC? and if so, at what current level?

Sounds like you have two 22V windings @ 1.1A each.

If you put them in series you double the voltage but they can still only carry the same current.

Yes.  You choose what to do with the two separate output windings.  They are not copper connected in any way.  You could make two +24 supplies for two different boxes with no interconnection.

Ok, so I was right...I just needed to make sure that I wasn't losing my mind.

You already lost it...just kidding. I wound the transformer in my reference amp with two secondaries running two mono blocks on the same chassis for much better stereo seperation.
