Would I need to ground the center taps or just not connect them to anything?

you could also try NYDave's slight variation:

1k log/audio taper level pot, and 50k linear "impedance" pot.

dave also had a 200ohm resistor across the transformer secondary (in parallel with the level pot).

if you have the parts around, try the different pot values and see which ones give you the best sound...
 
Yeah, I'm a big fan of NYD's work.  I saw his layout after I placed my order with edcor, kind of a bummer, they're iron is cheap enough to try both versions and see which works better.
 
you could still try out those different pot values if you have them handy.

i used NYD's pot values with a random 1:4 transformer i had sitting around - works well!
 
you can play with grounding the pri tap, go for low noise once the rack is in place and working,

from the schemo, it looks like grounding the sec ct will shunt your signal to the black wire which  is ground,

no wait, "isolate jack from chassis", make sure you do that if you play with the sec ground, i just tape those suckers off if it is a good balanced dual coil  humbucker, type,

what  is the peerless with the  12=L lams for the s 217 d ?
