Will I get in any trouble if I put two toroid transformers on top of each other using one long metal screw?
Will there be any inductive problems ?

I never had a problem with doing this.  It was discussed a few years back on a G9 thread.  I had my doubts, but I think the general opinion was that it can cancel radiated magnetic fields through cancellation.

just make sure to isolate the mounting bolt from the chassis, you don't want to create a single turn winding with a dead short through both transformers.

The stray magnetic field of transformers gets larger with the amount of current the transformers have to source. Significant cancellation of the stray fields should only be a problem if you're operating the transformers near their max. power rating - which is something you normally don't, you always keep them well within a safety margin.
