Is there an easy way to use the gain in the opamps to potentially boost the signal? Isn't that how a fader on a console works?

The typical channel fader in a console has +10dB of gain at full up (3x) .

You can use the differential capability of a non-inverting gain stage to reference the grounds between the fader ground and destination post fader gain stage.  This assumes that the signal is clean relative to the fader ground, so that may need another differential stage top get from X ground to the fader ground.

Still only a dual opamp and handful of resistors.
