Indeed, that looks nice. But PC-only is a showstopper for me.

If the software is designed to print at accurate sizes then would WINE present a problem?

Not sure how most PC software creates print files & send them to the printer. If it produces PDFs, and sizes are accurate, it might work quite well

PC not a problem here. We will install it on a laptop running our APX software so no biggie. But can easily run things like parallels to have windows on a mac and not have print issues. Also since it can save them as a PDF, I don't think there would be issue if used via wine.
