The eval kit comes with a bunch of IC's to program, and you can buy additional ones from digikey.

My next project with one will be with a TLC2933 PLL device from TI to make the configurable divider to get down to word clock etc.

FPGAs have also come on in leaps and bounds in recent years. Not too hard to make your own microprocessor using one.

Also useful for high speed digital audio processing. By old AKAI DPS24 has one.
