im converting a few older german dynamics to XLR and was wondering the pinout for the 3pin DIN style connectors - one of the mics has 3 wires + a shield and im not sure why?
could anyone be of help?

Yep,

Some of the Shure models have an unbalanced hi-Z out and a standard balanced lo-Z output, plus the shield.

Another handy test is a male 3-pin XLR with a metre or so of screened balanced cable, wired:

Pin 1= shield/screen
Pin 2= Audio +
Pin 3= Audio -

...going to three small crocodile clips. You can then connect this lead to the input of your preamp, and "sniff" out the correct connections using the croc clips and a bit of hunting around the pins of the output connector.

I keep a whole set of audio leads wired with the common XLR/TRS etc jacks to croc clips- "bodge" leads for quick testing and temporary connections during maintenance.

n = tuchel / din

2 = grosse tuchel (large tuchel)
