12Volts AC 1000mA (1 amp)

The one they have for their tube stomp boxes. How does that work? I think the plates get around 200V.

You will notice that the output is 12 volts AC. What possibly happens is that inside the pedal is another transformer connected the 'other way around' - so 12 volts going in can produce whatever secondary voltage is required. This is the way the Mesa Boogie V Twin pedal does it, using a 1:18 ratio transformer.

Or possibly a voltage doubler, or tripler is employed - plenty of possibilities exist with an AC supply source.....


 
EH does use a transformer in their tube pedals for the HV DC.  I've thought of using the same thing as an AC supply allows one to run DC heaters and HV DC. 
 
There is a transformer in the wall wort power supply that isolates the device from the current available from the wall socket. If the isolation at the power supply is good enough the whole thing can float (no chassis-ground connection), especially if the analog input/output is transformer coupled.
