I've always been electrically inclined....not at an engineer level....but I have a decent working knowledge of electricity and circuits.

I'm looking for a newbie project to start breaking me into eventually building my own mic pre's.

Is there any less complicated project anyone can recommend? Maybe mod'ing a guitar stompbox or building a DI box....anything.

Any thoughts?

how much you looking to spend. IF you really want a nice project to break you in that is good price to quality I highly recoment the hamptone mic pre.
For between 600-700 you can get either a dual channel solid state or a dual channel tube mic pre kit. The kit comes complet with everything you need. All you have to do is assemble it. was the prefect newbie project for myself. PLus has a good explination of everything.

And don't forget these!

The A12 is a perfect first project, and with the full kit you get EVERYTHING you need except the tools. Makes getting parts easy, just like the hamptone, but these are more recognizable designs.

Also, keep in mind that if you get the case, power supply, AND a module all at the same time the cart automatically deducts the cost of the power supply giving it to you for free.

That means your first complete kit will be $600 (plus s&h) and then, since you have the case and PS, all the additional kits are only $300 each.
