ok so I understand some of the variables as to why tubes have different "sound"
But what gives different op amps their individual characteristics?

I'm not sure you can tell the difference between a ne5534 and a opa2134, but it depends on the circuit maybe.
Saying they all got "individual characteristics" is stepping on audiophile territory.
Though I'm sure many dudes here will tell you the different in sound between different opamps.
Different teams.

Well, you can probably under suitable circumstances hear the difference between a uA741's 0.5V/us slew-rate against a 5534's 13V/us, or the noise difference between a TL072's 18nV/sqrtHz against a 5534's 3.5nV/sqrtHz.
You can also hear different distorsion mechanisms, depending on the number of stages and the structure of the output stage.
