Good project to learn with.
Putting a cheap transformer in front of the THAT chip is not going to make it a world class preamp, IMO, but fine to experiment with.

What do you recommand instead of Transformer ? , Caps ?

i was wondering about the voltage level at output , is it compatible with all sound cards ? , No danger about the +/- 18V ?

Take a look at the THAT 1512 datasheet and the suggested implementation. I'd recommend building as they suggest first. You could experiment with adding a transformer later if you wanted to.
Is the soundcard balanced or unbalanced? If it is balanced, then the THAT 1646 is needed. But if your soundcard is unbalanced you don't need it. The level going into the soundcard is based on the source and gain resistors. You don't want the level too high to clip the soundcard input (is it +4dBu or -10dbv)?
