If I were to use an 1176-style feedback GR circuit, with a simple rectifier and threshold control, to generate the Log control voltage for a 2080 VCA, what would the drawbacks be?

That would not be very different, because the FET has a 1/ax+b response that is not too different to a decilinear response. I'm not saying it's the same and there woud be no difference, but there are several designs that operate that way. Feedback compressors have the distinct advantage of linearizing the control voltage response.
