Baking the valve does not make sense unless it helps revive the getter.

When you bake a system for high vacuum you are releasing atoms from the surfaces it is mostly water.
The getter acts like a vacuum sublimation pump. In a sublimation pump the fresh surface collects the atoms.
I would guess the tube getter surface is used up after a few decades.

What Sony does with the C800G makes more sense.
I believe Sony chills the 6AU6 like tube walls to adsorbed(not absorbed) atoms
I believe they are running higher anode current to get a lower dynamic output resistance
This also means there might be more grid noise.
