Can I make a passive headphone attenuator just using a dual 10K pot? Or if I've missed this somewhere else, can someone direct me to the link? thanks

No, most normal pots won't be able to handle the required power.
You could do a stepped-resistor dual rotary switch with ½W resistors - that should work..
