Is there any reason why I can't run a second output transformer in parallel with the output transformer?

I got an output transformer that is 10k:600. Going out to an xlr.
Is there anything that would cause issue if I ran a 1:1, 600:600 after the  secondaries of the output transformer?  It would be in parallel and for having a separate isolated output...
 
try it and see,

what is driving the 10K primary?  EF804S? or 12 BH7?

two inductors in parallel will drop Henries in half,

probably depends on the transformers also, if the 600:600 has more inductance then you might not notice any bass loss, exciting current should be small if it is a good 600:600,

don't use a 2503, what about a 10K;10K? are you working the junk drawer?

maybe 40 Henries at 20 Hz, that is 6.28 * 20 Hz * 40 H = XL = 5K ohms

5 volts output on the 600 into the new 600 will require 5/5K = 1 ma of AC, on the pri side that 1 ma turns into 10K/600 = 16:1 Z = 4:1 turns ratio so 1ma/4 = .25 ma 

if the 10K sec is loaded with 620 ohms then you should not notice a thing with the new xfmr unless it too is loaded down,  change load to 1.2K on each to keep same freq response,

leakage C is small with a 600, a few pf,  so hi freq s/b ok,

maybe cut your plate resistor in half and see where the smoke comes out,
