I'm building this remote because the unit is missing. Can I skip pin 5 and the remote lamp and just run this over 3 pin xlr with a 5 pin to 3 pin adapter?

Like already say the bulb is not needed for proper operation.
The only drawback is that remote won't tell you if the reverb is powered on or off.
Just be careful by using 3 pin XLR for other purpose than audio mic or line level to not let anyone misunderstood the purpose of the connector.
I saw bad experiences when (stupid ?) mod were done with 3pin XLR to carry 220V AC remote for a rotary speaker ...
Here it's only 24V DC, but you'll better label the connector, you never know
Maybe not THAT much, but there's >5K of resistance, another few hundred Ohms can't hurt. #28 is 400 Ohms per loop-mile (there and back) so the cheapest EtherNet cable is fine to a mile. And then you probably can't hear what you are doing.
