can i change the output routing via relay/toggle switch as in attached schematic...
also, can i actually do the switching after the R7 pot's wiper ?
(R7 looks like trimpot on schematic, but its a pot)

The switching as depicted in the schematic doesn't look like a problem to me.
However the load of the transformer might be a bit high to tap it from the wiper of the pot.
(It might work, but it will influence the control behaviour of the pot. In general it is a bad idea to drive an output transformer from a high impedance.)
