Yup.. IC105 is a 3 terminal VR

The 2sk44sp are probably the Nch JFETs Q104/105 forming an electronic audio switch.

I suspect there are several N ch devices that could work there, I would look for parts with similar gate pinch off voltage range, and suggest swapping both so they switch back and forth nicely together.

I'm thinking to do an analog delay because have 2 MN3005 + MN3001 for clock bbds, I wonder if someone can suggest other projects based on these chips or similar but still available.
 
I used to sell MN3001 chips through my kit company back in the '70s...  A flanger based on that old kit was used on Heart's "Barracuda" recording. 

That schematic you posted will get you a good start..  570 compander chip will improve S/N, but don't expect miracles. Especially at any kind of delay.
