Ok, I have a Stupid Question about using two 15k/600 UTC O-8 transformers together to use to balance my line inputs on my Quantum QM8. Is this totally idiotic? I have 20 of these transformers left over from ADM channels... What harm to my audio signals would using two wired back to back to create a 600ohm balanced line? The line inputs would be connected to the line outs of my Scully tape decks (600ohm)

Why not just try it and see how it sounds?
It might not be the most elegant solution and you may (or may not!) get a somewhat 'colored' sound because of all the metal in the transformers. But if it works, it is a low-cost solution, because you have the transformers already.

O-8 is an ouncer I think.  It has +8 dbm of headroom.  Not a problem if you also pad the input to the Transformer.  Try it and see how it sounds.

If your Scully has transformer outputs, then you can wire these to an unbalanced input easily without any more transformers. To do this, you'd wire pin 2 of the Scully to the 'hot' input of the unbalanced box, pin 3 to the 'ground' of the balanced box, and pin 1 to the shield of the cable between the two, leaving it unconnected at the unbalanced end. This way, the grounds of the two devices are still fully floating relative to each other, but the signal from the Scully gets transmitted correctly to the unbalanced input.
