Back on an electronics course I did years ago I remember asking the teacher about how a toroid was wound ,he wasnt quite sure .
Even trying to explain it in words would be difficult ,that video shows the technique nicely .Theres an automotive and transformer winding place not too far from me ,I'm very tempted to ask if I can spend a day or two down there just to get some experience on the winding machines ,and maybe spin off a few custom coils while Im there . The maths involved might take a bit more homework first though.
