Just rebuilt console power supply. It has 2 adjustment trimmers per voltage.
One is    VOLT ADJ (I know what this is for) and the
other is  O.V.P. ADJ. What is this one for? How do I adjust it?

OVP typically stands for Over Volt Protection.  OVP senses when the supply voltage exceeds a certain point, and then "trips" and blows the fuse.  I would tend to leave that adjustment alone because I've seen some cases where the OVP circuit itself will fail as it blows the fuse.  The circuit commonly used for an OVP is called a "crowbar", and it drops nearly a dead short across the PSU rail in order to blow the fuse.  In doing so, the OVP itself can die doing its job.
