Setting up a new computer with software.  Would like to know what app you guys are using to draw these.

My PCB software can export DXF files.
I import them to Adobe Illustrator and draw the rest like cables etc in there.

+1 for Adobe Illustrator. Or any vector graphics editor (Сorel, Freehand, Inkscape etc)

I don't know why but I find all those frustratingly difficult to use. I prefer pen/pencil and paper.

Well, it's like PCB editors - you know the basics and do the job "inside the box". Paper scetch is not so easy to transfer to JPG
