The 3rd pin could be a centre tap for one side, or it could be an electrostatic shield. The best thing to do IMHO would be to hook up a generator and measure what comes out of the other winding, experimenting with different configs and noting phase relationship.

edit - I can't recall a shield on many O/P transformers - it's usually seen on IP transformers for noise reasons. My guess is the middle pin's a CT, enabling you to use the primaries in series or parallel, depending on ratio needed.
