I have been searching for a reputable dealer to buy a NOS matched quad of Valvo E80F tubes.  So far not having much luck.

I have found a supplier who stocks NOS but is unable to match them.  Am I safe enough buying a quad if they have matched date codes or is it still a lottery?

To my understanding the E80F is a high quality tube with tight tolerances, worth the gamble?

You'll need to specify exactly what parameter you want matched - otherwise the request is meaningless.

Usual matching of tubes has to do with bias points in power tubes - but this does obviously not apply to EF80.

So what is it that you want?

This is for a V72 build.  A stereo unit.  I'd like to match the performance of both channels so they behave similarly and as matched as is realistic

You might reach out to this guy as he seems to be prepared for any request. I have to admit I have never done business with him.
The point that was made about what parameters that are wanted matched is a good one. I also have to say that with tube pres of any kind that the tubes chosen for sound quality over electronic similarity usually are the better way to go. Back to the parameter matching, I would first ascertain a set of tubes you like the sound of in circuit and then have them tested for transconductance and so on. Then search out a set that meets that criteria.
