If you're using a 2x15V transformer, you should only use one of the secondaries (1x15V) to power your 15VDC circuit.

Alternatively use 7815/7915 to make +/-15VDC from this transformer

So it does not matter that I only use one of the secondaries (no symmetrical load)?
I'm using a 50VA Toroidal transformer so I geuss there is more than enough juice...

No, there's no rule that you have to use both secondaries.

Just don't load each half-section of a 50VA transformer more than 25VA
