Variable output impedance?

A little brainstorming.

I am thinking about a design and wanna have variable output impedances. Values between 20Ω und 2kΩ. What are the options incl. Pro/Cons to accomplish that? Various resistors in series to an Opamp?

You could literally use a 2k variable resistor in series with your output. I have seen solid state guitar amps use feedback networks to mimic the higher source impedance of tube guitar amps (to enhance speaker cabinet interactions).
