I want to do something a little different and build an enclosure from a nice wood and stain it. My GSSL won't be in a rack, but instead it'll be out on my work area so having something aesthetically pleasing would be cool. My only concern is shielding. I'm ignorant to the topic, and don't know if I should shield the inside like you would the pickup cavity of a guitar?

 
You certainly can by using aluminium foil with self adhesive backing. It will provide EMI protection to a degree. However, better practice would be to use 0.5 - 1.00 mm thick aluminium sheet. A bit like case inside a case.
