any current projects out there i can make use of for a pair of

Jensen JT-123-SL line out transformers

was thinking maybe a stereo pair of g pultecs?

im pretty sure that the input trannys would work but would the out put be able to be rewired 2:1 instead of 1:1?

or could the output be used to replace a ea 2508? with it in 1:3 it has a 600 ohm impedance when the jensen has a 600 ohm impedace at 1:1....

 
Your Jensen line outputs would work as outputs for a 312 style pre.

The Jensen 10K:10K are bridging input transformers - you could use them as inputs to a 312 style pre but not really a good match there.
I like these a inputs on a tube amp/preamp for line inputs.

Pultecs need something like a 600:600 input transformer and something like 2K4:600 or higher for the outputs, so nothing suitable there.
