Which 8 bit microcontroller (family)

Atmega 328PU.  The Arduino environment is stupid easy to use, and everything can be coded in C.  There are tons of libraries, and a very healthy user community if you get stuck or need help.  All you need to run it at full speed in an embedded system is a 20MHz crystal and two caps.  Or, you can run it slower on its internal clock, getting rid of the timing crystal.
