I want to build a 51x power supply now my question is can I use 2 toroidal? 1st for +/- 16v it has a 48v tap too 2nd for +/- 24v?

Using multiple transformers is no problem.
If using the GDIY51PSU make sure you have individual secondaries. You need 2 x 16V, 1 x 32V with center tap won't work here (and 2 x 24V, not 48Vct).

No.

I read 24-0-24 = 48 with center tap (3 wires).
You need two independent 24-0 (4 wires).

I'll make sure I have it that way before placing an order

There is a huge different between a transformer tap and a winding.
We don't need any tap, but we need individual windings in this PSU.
