More serious is the spacing of diaphragm  from backplate is different.  This IS serious and would result in the sort of problems you describe.

Measure the capacitance of each diaphragm to the backplate.  They should be very close.

So I measured capacitance of each diaphragm to the backplate, they are quite the same , about 72p...

Can this capsule be used to get variable patterns like the  Tim Campbell  CT12?
What voltages would be used?

Yes, and as far as I know you can use the Thiersch M7 with 160v.
But better ask Thiersch himself.
