you're right, compared to a laser this seems pretty mundane, but you don't have to use a plasma cutter. In fact the only thing they are selling is the cnc bed. You can use whatever cutting tool you want. Their web site shows this being used with a router for woodwork also.
Here's how I would use it:
variable power laser set low to etch all the scales and lettering into a blank sheet of andized aluminum. turn up the power on the laser and then cut the holes for pots, switches, meter openings, and outside dimensions.
