Hi Everybody ,
any test-comparison  with proper tracer device about  how much the 20 - 30 Years old potentiometers degrade the sound  ?
(especially on old mixing consoles)
any post about is welcome

Pot is not electrolytic capacitor so it will be hard to get any degradation of sound.
If not scratchy - should be good.
 
If no scratches then I guess all is still well.

I'm impressed by older amps still not showing any sign of scratchy pots (e.g. early SF Fender amps) while more recent gear has developed nasties already. 
 
.. and a scratchy or noisy pot after 30yrs is more likely to be due to a leaky electrolytic allowing DC through the pot.  Tantalum caps are notorious for dying here.  Replace with modern Lo-leakage Aluminium electrolytics and check the polarity is correct.
